Ingredients Stuffing , Coconut Slices , Walnuts , Tomatoes , Lime Juice , Linseed/ Flaxseed oil , 1-2 teaspoons Ground Linseed/Flaxseed , 1 Chilli , Ground Spices: Fenugreek seeds, Cumin seeds, Corrinader seeds and Rock Salt , Tender Runner beans , Chayote Container , Sweet Mini Peppers
Method Stuffing 1. Grind Linseed /Flaxseed to a powder. 2. Using a blender roughly grind the coconut slices, walnuts, runner beans, tomatoes, lime juice, linseed oil, ground linseed powder, chilli and spices. Taste and add more spices as necessary. The add this mixture to the mixing bowl 3. Grate the chayote and add to the mixing bowl 4. Slice the runner beans finely and add to mixing bowl 5. Thoroughly stir the mixture in the mixing bowl well till completely combined. Stuffing is now ready Container • Slice the mini peppers into half and remove the seeds. Fill each half with the stuffing and decorate with a slice of tomato before serving
